Summer 2025 Share Varieties and Descriptions
Sonora is known as the first wheat of the Americas, and its rich history lent to its recognition by Slow Food USA's Ark of Taste that launched the modern interest in heirloom, identity preserved grain. This soft white wheat has aromas of sweet corn and brown butter, and shines in tortillas, biscuits, pies, and other baked goods.
Marquis is a hard red wheat from Canada that has a classic aroma of toasted nuts, but with a hint of malt. Bread bakers enjoy using this variety in their sourdough and hearth loaves.
Chiddam Blanc de Mars is a California climate change-adapted variety that has proven indispensible through our drought years. In addition to its importance for our adaptation, customers remark on how this soft white wheat expanded what they thought they knew about wheat. Make your pancakes, muffins, pies, cookies, bread, and any baked goods taste delightful with this variety.
Abruzzi Rye is an Italian rye that, unlike its Nordic relatives, carries deep, umami-rich flavors.
The Sampler is perfect for those who want to try all the flours. This Share includes one of each type every month.
