Spring 2025 Share Varieties and Descriptions
Sonora is known as the first wheat of the Americas, and its rich history lent to its recognition by Slow Food USA's Ark of Taste that launched the modern interest in heirloom, identity preserved grain. This soft white wheat has aromas of sweet corn and brown butter, and shines in tortillas, biscuits, pies, and other baked goods.
Rouge de Bordeaux is a hard red wheat from France (can you guess where?) that carries notes of baking spices and nuts. Bread bakers enjoy using this variety in their sourdough and hearth loaves.
Chiddam Blanc de Mars is a California climate change-adapted variety that has proven indispensible through our drought years. In addition to its importance for our adaptation, customers remark on how this soft white wheat expanded what they thought they knew about wheat. Make your pancakes, muffins, pies, cookies, bread, and any baked goods taste delightful with this variety.
Merced Rye is a soft rye that is popular for brewing beer and distilling for whiskey, and also lends to crackers and breads. This rye is earthy and more mild than the dark northern ryes that tend to be more bold and sour.
