Fall 2024 Share Varieties and Descriptions
Sonora is known as the first wheat of the Americas, and its rich history lent to its recognition by Slow Food USA's Ark of Taste that launched the modern interest in heirloom, identity preserved grain. This soft white wheat has aromas of sweet corn and brown butter, and shines in tortillas, biscuits, pies, and other baked goods.
Marquis is a beloved hard red wheat from Canada that carries notes of cinnamon, mace (nutmeg skin), and pecans. Bread bakers enjoy using this variety in their sourdough and hearth loaves. This is the first season featuring Marquis, and it is available in limited quantities.
Chiddam Blanc de Mars and Wit Wolkoring are the California climate-adapted varieties that have proven indispensible through our drought years. In addition to its importance for our adaptation, customers remark on how these soft white wheats expanded what they thought they knew about wheat. These two varieties make roti, pancakes, muffins, pies, cookies, bread, and any of your baked goods more delightful than you could have imagined. For this share, you will receive one of these two varieties each month.
