Chiddam Blanc de Mars is a landrace soft white wheat originally from England, but popularized in France at the turn of the 19th century. This variety reflects the Sebastopol terroir more than any other wheat that I grow. One year it had aromas of cream, tea leaves, and honey, another year it carried notes of pecans, chamomile, and porridge.
Try this wheat in pancakes, muffins, cookies, bread, and any of your baked goods, and you'll be pleasantly surprised by its flavors.
